Hearty Ham & Navy Bean Soup
- Heat oil in a large saucepan over medium heat. Add carrots, onion and celery and sauté 5 minutes. Add broth and water and bring to a simmer. Simmer 8 minutes or until vegetables are tender.
- Stir in ham and navy beans and simmer 5 minutes or until heated through. Stir in spinach leaves and simmer 1 minute or until spinach is wilted. Ladle into shallow bowls and top with pepper to taste.
