Twenty-Minute Chili

Directions

  1. Cook rice according to package directions, omitting salt and fat.
  2. While rice cooks, heat oil in a large nonstick skillet over medium-high heat.
  3. Add onion, bell pepper, and turkey, and cook 3 minutes or until done, stirring to crumble.
  4. Stir in chili powder and the next 8 ingredients (chili powder through tomato juice); bring to a boil.
  5. Cover, reduce heat, and simmer 10 minutes.
  6. Serve over rice, and sprinkle with cheese.
